Valenia Ivery began working for the Preuss family in 1972 in the pantry at the Versailles on St. Charles Avenue. Today, 35 years later, “Ms. Val” is one of the family’s most valued and trusted employees at Broussard’s in the French Quarter. Despite her won losses after Hurricane Katrina, she returned as Chef Gunter Preuss’ only other kitchen personnel until he was able to add more staff.
Guests love the way Ms. Val has prepared Chef Gunter’s bouillabaisse for the last 35 years—she gives it a flair of her very own.
