Soileau’s has been open since 1937. Shirley Rubin was hired by the original owner, Clarence Soileau in 1967 (39 years ago) and continues today as head cook. Rubin has been loyal and dedicated to the restaurant, but her dedication has taken on another duty. She is also the caretaker for her original employer, Clarence Soileau, who is now 94.
